Dolce Vita – Gusto Italiano 2016 [MEDIA INVITE]

Gusto Italiano returns for its fourth edition in celebration of finest Italian Cuisine in Singapore. This week, Dolce Vita will host Michelin-Starred Chef Emanuele Mazzella to spice up the Gusto Italiano Festival.

The Bread

Today we sample the 4 course lunch menu, especially created for this festival. Amuse Bouche was Smoked Eggplant and Tomato. A subtle flavour foam couple with the tangy tomato open up your palate in anticipation for the dishes to come.

Cappensate: Seared scallops, cauliflowers, vanilla, grapefruit. Beautifully seared scallops, with crispy exterior and gentle sweet soft texture in the middle. The smooth cauliflowers purée provided a nice base for the tangy pickled mini cauliflowers. The grapefruit acidity is subtle and added contrasting flavour to the dish.

Cappensate - Scallops

Tortelli: Boston lobster stuffed tortelli, tarragon and buffalo milk burrata. The blended tarragon and burrata provided a base for lobster. The lobster filling in the tortellini is bouncy and full of flavour. The lobster meat in the centre is cooked a touched below the boiling point. Slightly soft, but you can taste the freshness of the meat. The funny thing, I thought there was a hint taste of banana. Yum Yum.

Tortelli - Boston Lobster

Brasato: Slow-braised Australian Veal Cheek, celeriac and roasted mushroom. The veal cheek is beautifully cooked, it just melts in your mouth. The veal cheek has a stronger gamy taste compare to beef cheek, though I have no problem with it. The celeriac puree has a slight spice to it, but it goes well with the earthy roasted mushroom.

Brasato - Veal Cheek

Ricotta: Sheep milk ricotta mousse, raspberry and Bronte pistachio. The ricotta is just mild and soft accompanied with chocolate sponge below. Meanwhile the pistachio gelato and pistachio sponge are just refreshing. If you need some more sparks in flavour, the raspberry fruit and sauce will provide for your palate. Definitely a perfect ending to the meal.
