[CLOSED] Montana Singapore – A New Menu and Freak Cakes [MEDIA INVITE]

Montana Singapore is an innovative modern cafe located in PoMo Singapore. They are known for their signatures such as Red Velvet Stacked Waffles and Jalapeno Mac & Cheese Waffles. To keep up with the current market trend, Montana keep innovating new dishes to their menu.

One of the latest additions is their Freak Cakes. These mini artisanal 3 layer cakes is enough for 2 to 3 pax to share, on top of giving you the WOW factors and IG worthy picture. We also sampled the Coffee Kaya Coconut ($14.80). Made from Coffee Sponge, Kaya Buttercream, coconut white chocolate glaze, gula melaka crumbs.

According to the pastry chef, this cake is inspired by her favourite breakfast “Ya Kun Set A”. The sponge is soft and it is just amazing, she can fit all the taste profile in it. The buttercream is slightly on the sweet side for me, but it might just be right for the others. I definitely can taste that SET A in this cake.

Smoky Nutella ($14.80). A treat for the Nutella lovers. Nutella Sponge, Nutella Lapsong Souchong Buttercream, dark chocolate glaze. The combination of nutella with black tea (Lapsong Souchong) balanced the sweetness nicely and manage the overwhelming flavour of the hazelnut. This cake kind of remind me when LD having one of those days where she just get a tablespoon of nutella and licked on it while sipping her English breakfast tea.

Not to be outshined by the cakes, the new menu items are also worth mentioning. Montana Bangers & Mash ($18.00). An interesting all day brunch type menu. The Italian sausage and chorizo hit the right balance of spicy and succulent to be savour with the crispy wholemeal toast. Meanwhile the century egg potato foam is soft and fluffy, as it was put through the whipping siphons, it bring out the tanginess in the century egg. It will take a few bites before you get used to the century egg potato foam but I definitely enjoy the bread and sausages.

Peking Chicken Confit with Waffles ($16.50). Inspired by popular Peking duck paired with modern cooking technique. The chicken is seasoned with five spice powder and sous vide in oil resulting in crisp and succulent chicken. Served with chives waffle, smoked ginger plum sauce and coleslaw. Unlike the American version of Chicken and waffles that does not sit well with me, the version in Montana does. All the ingredients just come together perfectly. Smoky, savoury, sweet, crunchy and succulent created the perfect fusion.

Miso Brown Butter Linguine ($15.80). A very rich pasta dish, with Japanese inspired ingredients topped with some egg porn. It combine miso and butter tossed with al-dente pasta, garnish with Japanese seasoning (furikake). A good and fulfilling pasta dish for carbo lovers.

Crab Burger with Yuzu Coleslaw ($24). A solid burger, feels like you are eating crab patties in between the buns. Thick, juicy with crab briny flavour which can be mistaken for otah patty. The yuzu coleslaw and raisin caper relish added some sweet and citrusy flavour plus crunchy texture to the burger. The double fried fries was great and it remain crispy even after we finish taking photos. Burger lovers, this dish is a must try here.

Of course, dining at Montana is not complete without trying their signature Coconut Cold Brew. My pick is the Gula Melaka ($6.80). It has a mild coffee flavour absent the acidity, a touch of sweetness from the coconut water plus the aromatic gula melaka. Served with ice ball, it was just so refreshing and good to cool you down during these hot days.

The décor of the restaurant is modern industrial. The high ceiling provided a good canvas to put different types of lighting fixtures. The area that we were seating has a very good natural lights through the windows. The main dining area are open and you can see passers-by clearly and the other way around as well. There is a staircase behind leading to Anarchy Wine + Brew Bar, a new concept from Montana Singapore.

Overall, the menu from Montana really show their creativity and execution. The food drew inspirations from our makan culture in Singapore, which basically melting pot from “around the world”. The #freakcakes is a must try if you are a dessert person. Cheers!!
