The
Square @ Furama RiverFront will be celebrating Chinese New Year 2017
with its own signature buffet line up. The festive delights will be
curated by award-winning Executive Chef William Lum and his team.
The
highlights of the buffet that will be served during the Chinese New
Year period will include dishes like:
Prosperity Salmon Yu Sheng |
Prosperity
Salmon Yu Sheng (富贵发财鱼生).
The combination of vegetables
and preserved fruits are well balanced. The sweet sauce is concocted
well enough to wet your appetite without feeling overwhelming. Of
course, not forgetting this dish also come with abundance auspicious
meanings. Huat Ah!!

Double
boiled Sakura Chicken with Winter Melon, Dried Scallop &
Honshimeji Mushroom (干贝冬瓜鸡汤).
Sakura chicken, known for its free of growth hormone provide a nice
base to the soup. The winter melon, dried scallops and mushroom added
to different layer of flavours and also nutrients in the soup. As it
is double boiled, the soup base remain clear, light and good to warm
up your stomach.

Braised
Sea Cucumber with Sea Moss and Flower Mushroom (包罗万有).
The sea cucumber and flower mushroom absorbs the braising sauce
nicely. The sea cucumber has a nice tenderness bite to it and the
mushroom has a solid juicy flavour when you bite into it. I just wish
my portion was bigger.

Steamed
Sea Garoupa in Home-Town Style (家乡蒸海石斑).
During the tasting, fish was steamed just right. Smooth, silky flesh
of the fish simply tells you the freshness of the fish. The Home-Town
Style of sauce which was cooked with mushroom and black bean provide
a good companion to the fish without overpowering the subtle flavour
of the fish. Yum Yum.

Rice
Cracker in Superior Golden Broth with Seafood and Coriander Stem
(金汤海鲜窝粑).
My type of comfort food. The sweet and robust broth is filled with
the seafood flavour from the scallops, prawns and crabs. The crispy
rice is light and crispy making this staple dish taste lighter than
usual.

Dessert
was Chilled Refreshing Lemon Grass Jelly Delight (经典香茅冻).
The touch of chilled lemon grass
jelly provided a sweet and refreshing ending the meal. The berries
inside provided a sharper, contrasting acidic touch to the dessert.
While the sesame crackers is simply aromatic and crispy.

Overall, the dishes above are the few highlights of the full spread
buffet available at The Square during the Chinese New Year period. To
keep the little one occupied, there will be activities available to
entertain them during the Chinese New Year Eve Dinner at the children
play area (Tykes @ The Square).
