Axis Bar & Lounge – May Mango Extravagant [MEDIA INVITE]

Afternoon Tea at Mandarin Oriental Singapore

For the month of May 2017, the team of award-winning pastry chefs from Mandarin Oriental Singapore curated five-course of sweet and savoury afternoon tea featuring on mango. Let's just call it Mango Extravagant.

The five-course afternoon tea starts with Pineapple mango jelly with coconut emulsion. The combination of sweet and tangy flavour with light creamy coconut emulsion is an opener that tickles your taste buds in anticipation for what comes next.

A trio of Lemongrass marinated prawn with chilli mango dip; Mango marmalade tartlet encasing a foie gras terrine; and mango crostini topped with marinated bell pepper and feta cheese followed. These light bites are definitely perfect for afternoon tea. The lemongrass marinated prawns combine the freshness of the prawns with aromatic Thai flavour is my preferred choice.

Next up is Tandoori chicken mango chutney wrap, Marinated crab and mango in mini baguette, Dehydrated mango and turkey ham with cheddar, and Smoked salmon and green mango sandwich. The third course starts to move into more heavy bites, showcasing bread and sandwiches. The pairing of tandoori chicken with mango chutney seems to be au natural which will delight your palate. The same applied to the smoked salmon and green mango sandwich.

The next course served one of my favourite pastry items, scones. Mango yoghurt scone; Magadascar vanilla scone; Curried potato, green mango and cilantro pie; and Smoked ham and mango relish turnover. The scones are served with decadent clotted cream, homemade apricot and strawberry jam. The Magadascar vanilla scones truly represent the perfect scone. Semi-crusty golden exterior, with light airy interior as an ideal base for the cream and homemade jam.

For the sweet endings, the three-tiered desserts filled with Lightly whipped pistachio ganache; Mango tapioca shortcake; Banana mango bar; Coconut mango sable tart; Tanariva chocolate mango ginger; and Mango palm sugar soufflé roll.

Fifth Course - The Sweet Ending

The mango tapioca shortcake is definitely not to be missed. Moulded into a shape of mango, it showcases the talent of pastry team. The taste is just Yum. Banana mango bar will give you the “shiokness” of rich dark chocolate flavour to end the superb afternoon tea.

TWG is the Tea of Choice for Mandarin Oriental Singapore. For this afternoon tea, I choose London Breakfast. It has a mild touch of red berries and malty sweetness.

Overall, the five-course afternoon tea certainly demonstrate the ability and creativity of the chefs in curating the menu. Don't expect to eat everything, but save some space for the sweet ending. The food and atmosphere in Axis Bar and Lounge will definitely keep the conversation lively with your guest/s or companion/s. Cheers!!
